We recently discovered our son had a gluten intolerance. This is a boy who ADORES pasta and bread, so breaking the news to him was really hard. Sure there are gluten free options, but let’s face it – gluten free pasta just doesn’t taste the same. So I made it my goal to discover really tasty gluten free options that’ll help my son feel like he wasn’t losing out!
Zoodles
Zoodles, a.k.a. zucchini processed through a spiralizer so it looks like noodles, are an incredibly hearty and healthy alternative to pasta. 1 cup of cooked pasta has 43 grams of carbs. Zoodles on the other hand only has 4.6 grams of carbs! Zoodles are actually easier to prepare than pasta. First – head over to Amazon to pick up a spiralizer – there are lots of budget friendly options. Once you spiralize your zucchini, heat up some olive oil in a pan and stir fry the zoodles for a few minutes (or you can also blanch it). Cauliflower Rice
My local farmer’s market is abloom with cauliflowers right now! This is a nutritional powerhouse – chock full of Vitamin C, B6 and Potassium . You won’t believe how easy it is to prepare cauliflower rice – all you need is a food processor.
