Healthy Taco Salad with Turkey and Black Beans

Food recipes for kids should be nutritious, super yummy, and easy for you to prepare. A variety of colorful food is a good indicator that the meal is full of vitamins, minerals, and nutrients for your growing child. This delicious taco salad is full of colors, flavors and healthy stuff for any child or adult. If you’re afraid that you have a picky eater that won’t eat this, the more you expose your child to new flavors and foods, the more likely they are going to try it and like it! (The rule of thumb is that kids need to see the new food at least 8 times before they try it so be persistent!) Food recipes for kids are considered kid friendly when the flavors appeal to their palates so the truth is that the more you expose your child to new flavors and foods the more they will eat what you want to eat.

Food recipes for kids should be balanced, meaning they should have a lean protein, a healthy carbohydrate and lots of green lights. This healthy taco salad recipe gets three gold stars for a nutritiously balanced meal.

  • Chicken and beans= lean protein
  • Rice and corn= healthy carbohydrate
  • Lettuce, tomatoes, avocado, onion= green lights

Best of all, there is so much flavor packed into this meal you won’t even miss the cheese and chips that add unnecessary red lights to your kid’s week.

Serves 4 people

Ingredients:

  • ½ Chopped Onion
  • ½ Chopped Red onion
  • Ground turkey (1 lb.)
  • Rice (3 cups)
  • Fire roasted stewed tomatoes (1/2 can)
  • Black beans
  • White corn (1/2 can or cut off fresh corn cobb)
  • Lettuce (chopped romaine or baby spinach)
  • Salsa fresca
  • Cherry tomatoes
  • Avocado (1/5 per person)
  • Fresh cilantro
  • Fresh squeezed lemon or lime juice (1/4 to ½)
  • Optional spices: Pinch of cinnamon, smoked paprika, chili powder, cumin

Directions:

1. Saute onions until tender and light brown. Cook meat until browned. Add stewed tomatoes and spices.

2. Add salt and pepper to taste.

3. Add garlic powder or crushed fresh garlic and onion powder.

4. Assemble your salad:

  • In a bowl place spinach and/or romaine
  • Top with black beans, rice, turkey, tomatoes, and corn
  • Sprinkle with taco seasonings like chipotle, red pepper flakes, paprika, chili powder and cumin
  • Top with avocado, cilantro, and salsa fresca. Squeeze some lime for some extra zest!
