3 Hacks for family night meals

There are days when we have more family over than expected, and days where I just don’t seem to have enough energy, so literally anything that I can get to help me out on those nights where I need to just get things together…can be life saving.

I’ve come to rely on

Cocina del Mundo

 for making weeknight meals easier for me. Items like

Indonesian coconut rice

and

Spanish saffron ric
e

are easy to whip up and inexpensive.  

One of the best things about Cocina del Mundo is that they have such a variety of packs that you can pop into a pot or slow cooker and it takes the thinking entirely out of it. What’s also great is that you don’t have the be the one thinking of new recipes and new things to try all the time. All that thought has already been done for you, and your family won’t be stuck eating the same rice or beans every night. From there you just need a little a little veg and protein to complete the meal.

Slow cooker ready packs

You can actually buy pre-made ready packs for slow cookers in the store and online. In addition, on days where you do have time you can prep a bunch and put it in the freezer, using them only when you’re ready and in a jam.

Have rotisserie chicken on hand

I love being able to use rotisserie chicken. It’s already cooked and all you have to do is add some things to it and move some things around a little bit here and there and you’re ready to go. It couldn’t be simpler. If you are vegetarian substitute something like marinated tofu.
