3 Modern Takes on Classic Oatmeal Recipes

Total cooking confession: I love oatmeal products. I have eaten oatmeal every work day – for the past ten (or more) years, my favorite cookies are oatmeal raisin and I find that oats create some perfect type of texture to foods.

So when Care.com partnered with Quaker to create some content, I jumped at the chance to give some of my favorite recipes a more modern twist. (All recipe videos were produced and originally posted by Giana Leone)

1) Blueberry-Banana Overnight Oats

You can’t browse Pinterest without seeing another fun Overnight Oats recipe. As someone whose only eaten oatmeal hot and plain, this was a fun one to try. Even better: my 6-year old daughter couldn’t get enough of it either, even though she “doesn’t like blueberries.” Tell that to the 30 or so she ate! I love this as a new twist on my old favorite breakfast, as well as something I could easily make for the kids at night – and my husband can put out for them in the morning before he leaves for work (limiting my breakfast stress by about 100%)!

2) Chocolate Peanut Butter Energy Bites

Another big trend in food is these no-cook Energy Bites. We are a pretty big granola bar snack family, so I relished the idea of making my own delicious grab-and-go snacks – with fresh ingredients. Seeing that my favorite foods are peanut butter and chocolate, we made these amazing peanut Butter and chocolate chip snack-bites (with ground flax seeds!). And honestly, when shooting this video, I could not get enough of them!

3) Pumpkin Whoopie Pies

We set out to make a fall version of the classic oatmeal cookie. Something you can make for dessert – or take with you to a kid-friendly gathering and have it be a huge hit. These whoopee pies were amazing and totally kid-approved!
